With a Spanish mother and British diplomat father, James grew up all around the world, but Spanish home cooking was the constant in a childhood of change and adventure. Drawing on the heritage of his Galician family and his own distinct flair, James’ cooking blends true Spanish recipes, flavours and techniques with a deep regard for sourcing the best ingredients.
Summer is here (hooray)! After a bit of soul-searching I dreamt last night that I had too many heavier-type foods at the market.. Too many pastry-based options for instance. They do sell well but I think it would be more fun to have Summery items. So I am going to phase out the empanadillas for a bit – (let’s call that the old) – but be introducing some meatball skewers to be served with patatas bravas – (the new), a mediterranean chickpea salad and couscous salad with fresh mint, apricot and pomegranate. Ideas, recipes and frequently inspiration are very much borrowed from my mother and her incredible cooking (the something borrowed bit) – and in order to ensure the no-one blue bit – there will of course be tortillas, empanada Gallega, croquetas de jamón serrano and a wide selection of ingredients / spices and charcuterie at the market this weekend.
Oh yes, and gazpacho in as great a quantity as I think I can manage 🙂
